Jamón Ibérico & Mango salad [Beautiful, Simple, Delicious]

MANGO: Look for ripe mangoes. At this time of the year you’ll find great Tommy Atkins in the market, and you’ll know they are ripe when they are yellow and red outside and tender when you gently squeeze them. If they are not still there, just leave them on your kitchen counter for a few days.

JAMÓN IBÉRICO DE BELLOTA: The highest grade of Jamón Ibérico is Pure Ibérico de Bellota “Acorn Fed”. You’ll find it at www.ibericoclub.com. Make sure to put bite-sized slices to make it easier to eat.

GREEN SALAD: You can use any kind of green for the salad. We like Lamb’s lettuce, Arúgula, Baby Beet greens, Spoon Cabbage, and Oakleaf.

DRESSING: Extra Virgin Olive Oil, Modena Vinegar, and salt.
