Asparagus Vinaigrette
White gold, dressed simply
White asparagus from Navarra, drained and dressed with a vinaigrette of EVOO, sherry vinegar, minced shallot, and Dijon mustard. No jamón this time — just the asparagus as the star, treated with the respect it deserves. A first course that's ready in three minutes and tastes like a Michelin kitchen.
Ingredients
- Authentic Esparragos de Navarra. Gourmet White Asparagus Jar (9-12 pieces)
- Award-winning Extra Virgin Olive Oil. Picual 500ml.
- Premium 12 Month Reserva Sherry Vinegar | Jerez (Spain) DOP
Preparation
- Drain white asparagus carefully — they're delicate. Lay flat on a serving plate.
- Whisk EVOO, sherry vinegar, finely minced shallot, a touch of Dijon, salt, and pepper.
- Spoon the vinaigrette over the asparagus. Let it pool around the spears.
- Finish with a few capers and a sprinkle of chopped chives or parsley.
