Storing and Preserving your Jamón Ibérico

How long does Jamón Ibérico last?

A whole leg of Jamón Ibérico will last up to 9 months unopened from the time it arrives at your doorstep. Once you open up the vacuum seal, it will last for 6-8 weeks, as long as you store it properly.

How do you store Jamón Ibérico?

After you’ve cut into your Jamón 100% Ibérico de Bellota, make sure to store it properly. Cover the exposed meat surface with those slices of fat you removed when you first cut into the jamón. Then cover the whole leg with a dry kitchen towel or cheesecloth to keep out the sunlight and air.

Does Jamón Ibérico need to be refrigerated?

A whole leg of Jamón Ibérico doesn’t need to be refrigerated. It should, however, be stored on its jamonero (ham-holder), away from a direct heat source or sunlight. A kitchen counter is a great place for it, as long as the counter isn’t next to the oven or stove-top.

Both have similar flavor and texture profile. Jamón is the rear leg, weigths around 16lb, yields around 50 plates and it's slightly easier to carve. Paleta is the front leg weights around 10 lb, yields around 30 plates and it's a bit more difficult to carve due to the bone structure.

Acorn-fed is the highest quality, great fat marbling, silky and buttery texture, "nutty" hints, slightly sweet, perfectly balanced. Grass-fed is the 2nd highest quality, good fat marbling, slightly firmer texture, less "nutty" hints, great flavor and very well balanced.
